BAKING CAKE AND EATING IT TOO 

Pretty retro in style, though I've since noticed there's talk of pineapple in the fashion industry, I whipped up this Pineapple Upside-Down Cake using fresh pineapple and cherries. Hilarious looking thing, but it was easy and did taste ok. It's based on a recipe from a great vegan cookbook I have, though I riskily improvised a bit with the mixture. Running short of cherries, the garnish looks skimpy, so would've looked better without it, and the cake didn't centre on the plate perfectly despite my careful plan, so on a philosophical note - just do things your own way! The proof is in the pudding.
