BLACK SEED CAKE - VEGAN

Wondering where I’ve been, I recently discovered black sesame seeds, and was keen to see the visual effect they would bring to my Dangling Carrot Cake recipe that I often modify.  The texture is definitely more exciting looking with these black seeds rather than the light coloured variety.  Here’s this recipe:
 
Preheat oven 350F. Grease and flour a large cake tin.  Mix together 1 cup plain flour, 1 cup wholemeal flour, 2 tspn baking powder, 1 ½ tspsn baking soda, 1 tspn salt, 2 tspn cinnamon, and 4 tspn egg replacer in large bowl.  Mix  1 ½ cups sugar and 1 ½ cups vegetable oil together in blender then add to dry ingredients with 2 grated carrots, 1 tbspn each of black sesame seeds, sunflower seeds,  linseeds,  ½ cup finely chopped almonds, and 1 can finely chopped pears including the juice - mixing well. The mixture slides easily into the tin.  Bake for about 1 hour or till cooked.  Turn out to cool on rack.  This cake is extremely moist, and doesn’t need anything on the side.
