su reaL POTATO SALAD - VEGAN

Good, old potato salad. It's been around forever, and goes with pretty much anything. Though you can buy and make vegan mayonnaise, I use olive oil and lemon juice as they always seem to be in the kitchen. Here's what I do: 

Sauté a mix of thickly sliced spanish and brown onions (1 of each) in about 1/4 cup of olive oil until soft. Peel and cut about 8 medium/large sized potatoes into small pieces and simmer in salted water until just cooked. Drain well. Pour the warm onion and oil over potatoes immediately while they're still hot, and mix through carefully with a big fork. Add the juice of a lemon that actually has juice in it, 2-3 finely chopped celery stalks, a few young celery leaves, chopped herbs, salt and pepper, and some kidney beans. Mix well again, and serve on a bed of lettuce and alfalfa sprouts. It seems to go down well.
