DESSERT ON THE DECK

The end of a late summer day, and think I've escaped the mozzies! Just devoured one of these Vegan Gingerbread Carrot Cakes not long from the oven. I hadn't baked for ages, and thought my off-spring might like to remember their mother baked once. I also rediscovered my lovely, old chinese cup and saucer hiding at the back of the cupboard that mum bought me from an Auckland antique shop. The dish is hand-beaten brass which I bought in Sydney about a hundred years ago when I first started collecting things for my first flat. 

These spicy cakes have a lot of fresh ginger in them, and aren't too sweet, though the icing made with lemon juice and sprinkled with cinnamon gives them a tart, sugary jolt. Love that! I modified the ingredients slightly, but email me if you'd like the recipe.
